We can process our peppers in various forms including mash, brines, chipotle and dehydrated.

Brine

- Stemless peppers are selected and placed in a brine solution made of water, salt, acetic acid and calcium chloride.
- After 24 days in this solution the peppers are considered cured and are ready to ship.

- Stemless peppers are processed and dried in our state of the art, stainless steel, tunnel dryer.
- Peppers are dried to less than 10% humidity and stored in plastic bags under cold and dark storage.    

Chipotle

- Fresh peppers are dried and smoked in our fully mechanised smoke house.
- Pecan wood chips are used as smoke generators.
- Peppers are dried under 15% humidity and stored under cool and dark conditions.
We have mills that can process our dry products to a fine powder or flakes.

Mash

- Fresh peppers are ground same day of picking to ensure freshness of the product.
- Stainless steel hammer mills are used to process these peppers into mash. Different screen sizes are available.

Puree

- Urschel Commitrol machine is used to process our peppers into a puree.
- Seeds are ground in this process and product comes out very uniform.
Mash and Puree products can be processed as either fermented or acidified. Final product is stored in plastic drums.
