These peppers are all offered in mash form, dehydrated whole, dehydrated powder, and pickled.
Pepper mash is currently our biggest item and we can supply mash of different colors, red or green, and of different heat levels, its just a matter of what the client needs.
Availability of these peppers varies somewhat, but in general terms we try to constantly have product in stock, and can coordinate to deliver volumes at specific times of the year.
Pepper mash is shipped in either 55-gallon drums (200 kilos) or in 50,000-pound isotankers (22,700 kilos). All mash has to be fermented prior to shipping.
Dehydrated whole or powder peppers are processed using tunnel dryers that use propane gas as heat source so the combustion of the dryers is very clean, and we can dry about 6 tons of pepper in one day.
Dry peppers are packed in 10 pound carton boxes with peppers inside a poly bag, or in 55-gallon plastic drums with peppers inside a poly bag.
Product is stored in cool rooms away from direct sunlight until time for shipment.
Pickled peppers are more of a specialty item for us, and we strive on delivering a very good product. Peppers are brined in brining tanks for roughly 24 days before they can be shipped.
We can offer a wide assortment of peppers, from green, to yellow, to red in colors, and also peppers of different heat levels, the jalapeno being the mildest and the habanero the hottest.
Brined peppers are packaged in 5-gallon plastic pails, or in 55-gallon plastic drums. Net weight varies depending on the variety of pepper being shipped.
